Carrot halwa or Gajar ka halwa is a very popular sweet in North India they prepare this mostly in Winter Season(because of carrot season!! price will be less ). Here I’m seeing that so many of my South Indian friends are also like Carrot halwa. In north side two types of Carrot will be available Black and Red color but I’m not getting Black color Carrot here in South. It is a tasty recipe but it will take some prepare time also this recipe doesn’t required that much of ghee or sugar. So guys you can prepare this Carrot halwa in 1 hour.
Ingredients needed for Carrot Halwa
- Fresh Carrots – 500 gm
- Milk – 500 gm
- Sugar – 1 cup or 200 gm
- Ghee 8 tsp
- Cashew – 50 gm
- Raisin(kismis)- 25 gm
- Cardamom powder- ½ Tea Spoon
How To Make Carrot Halwa
Wash the Carrot well so no dust/mud should be there (remove the peel) then grate the Carrots by medium blade I like medium size.
Place pressure Cooker or any heavy bottomed vessel on medium flame(1000 watt for Induction Stove) then add 4 tsp ghee on the vessel(for fry purpose only)
Fry the grated Carrot until it turn into Saffron(kesariya) color it means Carrot is fried it will take 10-12 minutes.
Add Milk & Raisin(Kismis) on it and boil it till it become dry(or until Milk evaporates) also stir the content from time to time to prevent scorching this process will take around 40-45 minutes(30 minutes for Induction Stove at 1000 Watt).
Add Sugar and stir it on low flame so the mixture became thick it will take around 5 minutes (800 Watt for Induction Stove).
Now Add the Cardamom Powder, fried Cashew and rest 4 Spoons Ghee on it and mix it.
Cook the Carrot halwa and stirring it occasionally until the added Ghee separates out. This takes 10 more minutes(800 Watt for Induction Stove).
Remove the vessel from flame & now yours Carrot halwa is ready to serve.
Tip’s for Carrot Halwa
- If you will add 100 gm Khoya in the Carrot halwa at the time of adding Milk Halwa taste will become superb.
- You can serve Gajar Halwa hot or cold and also you can be refrigerated it up to 2-3 days.
